Chef Francisco of ELMO Catering explains why you don't have to be afraid of foods processed with lye and why this process evolved and is beneficial.

After all, most people happily eat corn tortillas, which are also processed with lye. He’ll show how when you put lutefisk, corn tortillas, and a bit of chef's magic together, you have a lutefisk dish on your Christmas buffet that is moist, flavorful, and a happy surprise to your guests.

Chef Franciso is an experienced chef and caterer who enjoys creating food that creates memories. He was mentored by Soile Anderson, founder of Deco Catering. There, he learned how to prepare Scandinavian foods. He went on to work with other chefs, so his culinary experience ranges from Finland to India. His company, ELMO Catering, is the house caterer for Norway House.
